专访上海浦东香格里拉大酒店总经理吴俊杰先生

“展望2018”酒店高层系列访谈

来自德国的吴俊杰于29年前投身酒店行业,在德国柏林的一家五星级酒店工作。他于20年前任职新加坡香格里拉大酒店,从此开始了与香格里拉酒店集团的缘分,期间曾先后在香格里拉旗下的9家亚洲酒店内担任要职。他的足迹遍布德国柏林、法国、印度尼西亚、埃及、新加坡及中国。休闲时间里,吴俊杰喜爱各种运动,包括冲浪、登山和长跑。

T&L:您觉得2017年中国的高端酒店业市场有何变化?贵酒店如何应对这些变化?

What changes do you think about China's high-end hotel market in 2017? How did your hotel respond to these changes?

吴俊杰先生:根据上海旅游局最新发布的数据,去年上海游客增长量相比2016年增加了2%。这一数据同样反映在了酒店业市场,上海迪士尼度假区的开业进一步扩大了上海旅游业的客源市场。就我们上海浦东香格里拉酒店而言,酒店位于外滩之滨的绝佳位置,距离迪士尼度假区车程便利,去年接待了许多以上海迪士尼度假区为目的地的游客。国内游市场需求增长强劲。而商务会议市场需求同样增长,占酒店全年营收的35%。

Based on the statistics from SH Tourism Bureau, the overall visitors to SH increased 2% compared with 2016, which reflected in hotel business.  Disney has spurred a lot of demand and we’ve seen a great increase in leisure guests because many of them like to combine the Bund location with our quite close location to Disney. In that case, we have registered very good business in 2017 with demand from domestic travelers being strong. And MICE continuously remained the growth in the market, which was our biggest segment that contributed more than 35% of the hotel business.

T&L:越来越多的高端酒店进驻中国市场,竞争也越来越激烈,贵酒店有哪些措施应对激烈的竞争环境?

More and more high-end hotels are entering the Chinese market, leading more and more fierce competition. What measures will you take to deal with the fierce competition environment?

Pudong Shangri-La is an iconic property in Shangri-La Hotels and Resorts in a very special location and well-established reputation. It is well-known for its Asian Hospitality. T&L:您认为过去一年酒店业在服务创新、管理创新、科技创新等方面有哪些值得关注的案例?

What noteworthy cases of service innovation, management innovation, scientific and technological innovation within hotel industry in the past year?

吴俊杰先生:-餐饮外宴:我们取得了上海市食品药品监督管理局颁发的食品外宴许可证。目前全市只有少数酒店获得了相关资质。现如今餐饮市场需求增长,形式也更富于变化。相比于传统的在酒店内用餐,人们更喜欢在黄浦江畔,在老厂房,艺术馆内甚至是博物馆等具有氛围的场所用餐。2017年,酒店成功接待了数场体育赛事,时尚活动及企业晚宴。
-美食创新:早在大众开始挖掘新兴消费趋势前,酒店已经在着手创新合作模式来迎合全新的美食文化。去年底,我们与英国著名时装设计师PAUL SMITH世界巡回大展 “Hello, My Name is Paul Smith” 成功合作,于大堂酒廊发布了新一季的Paul Smith艺术下午茶,延续到了今年1月8日。全新形式的跨界艺术下午茶给食客和艺术爱好者们带来了无与伦比的视觉与味觉冲击。而下午茶点心的口味设计也富于创新变化,虾仁芒果配鱼子酱三明治、蜜桃果冻、草莓椰味泡芙等美味小点的造型创意均受Paul Smith经典英伦时尚元素启发,美味与艺术在这里碰撞出无限创意火花。Paul Smith下午茶一经推出也广受好评。
此外翡翠36餐厅带来了裸眼3D马可波罗系列,六道式的主题套餐,将美食与科技手段结合,跨越法式、中东、西域以及中国特色料理,可谓是美食无国界。翡翠36餐厅是中国大陆地区首家推出裸眼3D马可波罗系列的餐厅,食客在此坐拥旖旎外滩美景,体验到裸眼3D小厨师带来的震撼视觉体验的同时,尽享我们极富创意的厨师团队带来的丰盛佳肴。

-Outside catering: We have got the outside catering license issued by the Shanghai Food and Drug Administration, something that only a few hotels in the town have managed to obtain. The market is growing and getting more sophisticated as people find it more exciting to have their dinner next to Huangpu River, in a factory, in an art studio or in a museum rather than a hotel as they are looking for a more engaging experience. In 2017, the hotel successfully supported a few renowned sports events, fashion events and corporate gala dinners.
- Culinary innovations
In fact, before gearing up to fully tap the emerging consumer trend, the hotel has already made some innovative efforts to adapt to the changing culinary culture.
In one of its latest successful endeavors, the hotel, in cooperation with the “Hello, My Name is Paul Smith” exhibition, by renowned English fashion designer Paul Smith, launched last month, a new art series and afternoon tea at the Lobby Lounge.
Available through January 8, 2018 and designed to bring art lovers and diners a sense of luxury through seeing, feeling and tasting, the themed afternoon tea, featuring beautiful creations such as: Prawn Mango Tobiko Sandwich, Peach Jelly and Strawberry Mousse with Choux, all inspired from Paul Smith’s work and tiered in artistic presentation, has received a very positive response from the market.
The 3D Journey with Marco Polo, a six-course themed menu ready for booking at its Jade on 36 Restaurant, is an even better example showing that culinary imagination has no boundaries.
The first hotel to launch the “3D Le Petite Chef — Marco Polo series” in the Chinese mainland, Pudong Shangri-La, East Shanghai has combined gastronomy and entertainment with 3D animation.
Guests will be impressed by the city skyline’s magnificent views, while savoring culinary delights from the restaurant’s talented chefs, along with the playful animation of a miniature chef who invites himself to a table of guests to “prepare” meals right before their eyes.

T&L:2017年贵酒店有哪件事情或成就令您最为难忘?

What’s the most memorable event or accomplishment of your hotel in 2017?

吴俊杰先生:2017年最难忘的要数我们在12月2日举办的第三届圣诞慈善跑活动,总赛程5公里及10公里的活动吸引了近千名来自各年龄段的参赛者。大家身着充满浓郁节日氛围的圣诞着装,令陆家嘴弥漫着运动的快乐与节日的狂欢。参赛者沿途穿越陆家嘴明日之城的都市天际,为复旦大学附属儿科医院的白血病患儿献出自己的力量。这次活动共捐出人民币157,168元(折合美元约23,746元)。

On December 2, Pudong Shangri-La, East Shanghai raced into the holiday season with its third annual Charity Santa Run. The 5K race welcomed runners of all ages in jolly Santa costumes to benefit the Children’s Hospital of Fudan.
After a fun day of running past skyscrapers and along the river, the event raised RMB157,168 (about USD23,746), which will be donated to the hospital to help children suffering from leukemia.

T&L: 2018年贵酒店的工作重点是什么?您有什么特别的计划或想法吗?

What will be the focus of your hotel in 2018? Do you have any particular plans or ideas?

吴俊杰先生:2018年,上海浦东香格里拉大酒店迎来了开业20周年。作为浦东地区标志性五星级酒店及香格里拉酒店集团大陆地区旗舰酒店之一,酒店见证了陆家嘴地区20年间的繁荣与发展。
-我们会带来更多创新举措:例如,怡咖啡自助餐厅即将与《舌尖上的中国》总顾问沈宏非合作,推出【沈爷的档口】美食活动,翡翠36餐厅作为大陆地区首家提供裸眼3D马可波罗系列套餐的餐厅,酒店成为沪上少数几家获许提供餐饮外宴的酒店。
-我们将开展一系列企业社会责任活动,回馈社会:例如,1月20日将与浦东新区总工会共同举办“回到香格里拉浦东新区职工集体婚礼”仪式;与复旦大学附属儿科医院共同开展更多活动,为需要帮助的患儿提供支持;10月将再次携手“超越意识”乳腺癌防治公益组织,开展“粉红十月”活动,呼吁全社会关注女性健康;今年圣诞季前夕,我们将继续开展一年一度圣诞慈善跑活动,呼吁陆家嘴地区白领加入,共同庆祝节日的欢愉同时为社会公益慈善奉献力量。

SLPU will celebrate its 20th year anniversary.  As the landmark in Pudong and Shangri-La’s flagship property in China, SLPU witnessed the 20th year development of Lujiazui area.

What’s your travel plan in 2018? What’s your personal standard to choose a hotel?

吴俊杰先生:今年计划前往黄山,普陀山,感受中国名山胜地的魅力,还计划去北欧等地。就我个人而言,选择酒店可能还是会考虑酒店位置及景观。
